The first is that its invention was an accident that occured in Virginia during a college lecture on how to make toffee.   Another story that puts fudges existence down to an accident suggests that a baker stumbled upon it while trying to make caramel. While its orgin could very well have been an accident, the exact details of that fateful day are still a mystery.   All that’s known for sure is that the first recorded instance of a recipe for fudge is from a letter written by Emelyn Battersby Hartridge in 1886. She describes the recipe that she got from either her cousin or the cousin of a classmate at Vassar College. Two years later, Hartridge made 30 pounds of fudge from the recipe for the college’s senior auction.   The first printed copy of the recipe, titled Fudges at Vassar, was published in 1895. From there, word spread and by the 1900s, fudge was being sold in shops on Mackinac Island, and the rest is history.
