While the exact origins of the day are still unknown, the history of the coconut cream pie itself dates back to the 19th century. Increased logistical technology and importing endeavors opened the American and European market to a wealth of tropical fruits that became instant favorites.  

Coconuts didn’t gain a place as a common practical ingredient until a French export company began shredding and drying coconut meat, making it more stable for transporting on long journeys to western markets. 

Another push towards popularity for the coconut came in 1895 when a miller in Philadelphia was paid in coconut by a Cuban client as settlement for a debt. The miller began processing and distributing the coconut meat to the American market, sparking a rash of new recipes featuring coconut. 

While the person who first created the coconut cream pie is also a mystery, the recipe was solidly entrenched in American cooking and dining by the early 1900’s.
