Celebrate the king of meats on April 27th with National Prime Rib Day. One of the eight prime cuts of beef, prime rib, also known as a standing rib roast, is taken from the 6th to 12th rib and is often made with potatoes, vegetables, and stuffing for a Sunday roast meal.  

While the history of National Prime Rib Day, and that of prime rib itself, is something of a mystery, we know that at the dawn of the Industrial Revolution it was already making its way to the US and Canada as well as the UK and even as far away as Australia. 

Prime rib is most often seasoned with some combination of garlic, salt, pepper, rosemary, oregano, onion, and thyme. The meat should be slow-roasted either in a roasting pan in the oven or in a crockpot. Either way, moisture is key so it’s important to keep an eye on the temperature to make sure your roast doesn’t get dried out.
