Celebrate this succulent seafood on August 5th for National Oyster Day. Since these mollusks take on the characteristics of the water they live in, over 100 different species have developed around the world taking their attributes as well as their names from the bodies of water where they grow.
Oysters provide a large amount of vitamin A and vitamin B12 as well as other nutrients like calcium, iron, selenium, and zinc that could benefit heart, brain, and skin health as in addition to supporting healthy kidney and lung functioning.
Not only do these tasty shellfish benefit people who eat them, but they also clean and filter the water where they live making them a positive presence in the ecosystems they inhabit.
After being severely overfished in the 19th and 20th centuries, oysters are now a delicacy to be protected if we hope to be able to continue enjoying their benefits and decadent taste well into the future.
