May 22nd marks National Vanilla Pudding Day. The term pudding has changed from its original meaning of a hot savory dish to the chilled, sweet desserts or snacks we know today.
Modern pudding is much more closely related to custard than ancient puddings. The first vanilla pudding was developed in 1837 by chemist Alfred Bird whose wife was allergic to eggs. It was a powdered egg-free custard made of flavored cornstarch.
From there, the first commercial puddings in the US were sold by My-T-Fine in 1918, but they still needed to be cooked at home on the stove. Instant pudding didn’t come around until the 1940s, but it has certainly stuck around since then becoming one of the most popular desserts in American households.
