Despite this longstanding use, the first written recipe for fried scallops doesn’t appear on recon until 1846 in Miss Beecher’s Domestic Receipt Book.
Scallops really took off in popularity in the 1920s and 1930s as more people immigrated to the U.S. and brought with them new styles of preparation that suited the sweet seafood. By the 1950s, scallops had become a delicacy served in famous French restaurants.
