First served as a dessert at Queen Victoria’s jubilee celebration in 1897, the dish was enormously popular during her reign. The dish also enjoyed a revival in the 1950s and 1960s as well as its current comeback as a vintage fascination.
Credit for the dish’s creation is placed solidly with the famous French chef, Auguste Escoffier. The dish was created with the expres intention of making an impact on the guests who bare witness to the flambé right in front of them as it is lit after being presented.
